Method and apparatus development and testing
Ass. Prof. Eleni Kalogianni (Project Coordinator) She is the Principal Investigator of the project. Ass. Prof. E. Kalogianni has devised the method and prototype design. She is responsible for the investigation of capillary penetration of fresh and degraded oils in various porous media, for the investigation of the degradation during frying of oils of different origin and different degree of unsaturation, for the analysis of fried oils physical and chemical properties, for the design, development, testing and assessment of prototype. Finally, she is responsible for the dissemination and exploitation activities. |
Dr. Despoina Georgiou Dipl. Chemical Engineer, MSc. in Nanosciences & Nanotechnologies She participates in the examination, characterization and selection of the appropriate porous medium. She also participates in the capillary penetration experiments, in the prototype design, development and testing. Finally, she is involved in the dissemination of the project results. |
Mrs. Anna Marinopoulou Dipl. Αgriculturist, Msc in Food Science & Technology, PhD Candidate She is involved in the manufacturing of the preliminary technique for the realization of the capillary penetration experiments. She participates in the characterization of the porous media and the design and testing of the prototype as well as in the dissemination activities of the project. |

She participates in the examination of the change in oil properties as a function of oil degradation with viscosity measurements.

She participates in the examination of the change in oil properties as a function of oil degradation and especially in the examination of properties used as criteria for frying oil quality determination such as polymeric and polar compounds via High Pressure Size Exclusion Chromatography (HPSEC)

She participates in the characterization and evaluation of fresh and degraded oils with standard methods as well as with commercial available rapid tests. Also, she is involved in the dissemination activities.

She is responsible for the realization of basic oil analysis such as the determination of primary and secondary oxidation products and of hydrolysis products.
